The water plant is the most under-budgeted station in a beverage line, because it is invisible in photos and everything downstream depends on it. This FAQ explains what each treatment stage does, how the system is sized, and what buyers get wrong.

1. Why water treatment matters

Beverage water is a recipe ingredient, not a utility. Inconsistent minerals change the taste of water and CSD; suspended solids and microbial load threaten the product itself. The water plant exists to make every litre the same, whatever the source delivers that day — and it is the station buyers most often under-budget, because it shows no moving parts in a photo.

Size and design follow the source: the treatment system is engineered around the water analysis, the product target and the line output. Skip the analysis and the plant is a guess.

Send the full water analysis (minerals, hardness, microbiology, seasonal variation) with the enquiry. The treatment quote follows the water, and the analysis is the cheapest insurance in the project.

If the source is new (a well or spring), sample it across seasons — a single summer sample misses the spring flood and the winter drawdown.

2. Фильтрация

Filtration removes suspended solids: sand and multimedia filters take out larger particles, cartridge filters protect downstream equipment, and where the source demands it, finer media handle iron or manganese. The stage is sized on flow and the solids load of the source — a turbid river source needs a heavier front end than a clean borehole.

Filtration also protects the equipment behind it: a softener or membrane running on unfiltered water fouls faster and costs more in the long run.

3. Softening and demineralisation

Hard water scales the filler valves and changes the taste; mineral-heavy water needs balancing to the product target. Softening exchanges hardness ions, and reverse osmosis or demineralisation takes the water toward a defined low-mineral base that the recipe then rebuilds. The choice between softening and RO is a product decision — mineral water keeps a controlled profile; CSD and many waters start from a demineralised base.

Confirm the product target with the brand owner before the treatment is designed: 'good water' is not a specification.

Disinfection protects the water through the plant: chlorine or another oxidant dosing, UV, or ozone — often a combination, with the final residual managed so the product is safe and the taste is clean. The disinfection design depends on the source's microbial load and the product's requirements.

Disinfection is a process, not a single device: the dosing point, the contact time and the residual control all matter, and they are engineered, not bolted on.

5. Polishing and the filler feed

Between treatment and the filler sits the polishing stage: final filtration and any final adjustment, so the water reaching the filler is clean, stable and at the right pressure. The polishing filter also protects the filler valves from particles picked up downstream of the main plant.

The water feed to the filler is a continuous duty — the plant must hold flow and pressure while the line runs, with buffer for peaks. Undersized feed is a common hidden cause of line stoppages.

6. Sizing the system

The system is sized on two inputs: the line output (and its peak demand) and the source quality (the worse the water, the heavier the treatment). The supplier quotes the plant on the water analysis and the line spec — a generic skid 'sized for your line' without the analysis is a guess with a price.

Add reserve for growth and for regeneration or backwash cycles, which take the plant offline briefly. A plant running at 100% of capacity has no room for either.

The repeated mistakes: designing without a water analysis, undersizing the front end for the actual source, skipping the polishing stage, and treating disinfection as a single device. Each is invisible at purchase and expensive in operation — and each is avoidable with the analysis and a proper design review.
